Healthy Coconut Chocolate Cereal


Fall is here so I'm craving something new and different than oatmeal. So I decided to use rice cakes in a new way and make my own healthy cereal that's delicious and totally guilt free. This simple recipe is easy to whip up on a Sunday to last you all week along. Just add some milk and fresh berries and you've got a tasty breakfast to keep you satisfied all morning. It also makes a great snack if you're hosting friends.

Makes 6-8 servings


  • 1 package of rice cakes (I light plain and lightly salted)
  • 1/2 C almond butter
  • 2T coconut oil, melted
  • 1 scoop of chocolate protein powder (I like the Sun Warrior brand)
  • 1 T cocoa powder (unsweetened)
  • 1 t cinnamon
  • 1 t vanilla extractd
  • Dash of salt


Add rice cakes to a bowl and break them up into small chunks. Add in remaining ingredients and toss/stir until small chunks form and ingredients are evenly mixed in. Keep the mixture in the fridge for up to one week! Enjoy as a snack or place 1 cup of mixture in a bowl and serve with almond milk, pomegranate seeds and fresh berries for a healthy take on cereal.
