Almond Flour Donuts with Chocolate Coconut Glaze

So simple. So delicious. These donuts taste just like the real thing! This healthier version uses a donut pan so you're spared the extra fat & sugar without sacrificing on flavor! Seriously, you've gotta give these a try for breakfast next weekend. Served with fresh fruit and a side of coffee, one (or two) of these guilt-free donuts is a pretty tasty way to start the day. 

For the donuts (makes 12):

  • 1¼ cup blanched almond flour

  • ¼ teaspoon baking soda

  • 3 T brown rice syrup or maple syrup

  • 1/2 t almond extract

  • 2 T coconut oil, melted

  • 2 eggs, at room temperate, yolks & whites separated

  • 3T unsweetened coconut flakes (for topping)

  • 1T chia seeds (for topping)

For the glaze:

  • 2 T dark chocolate or cocoa powder

  • 2 Tablespoons coconut oil


Preheat oven to 350 and spray a 6-mold donut pan with coconut oil spray or rub coconut oil into the molds using a paper towel. In a small bowl, combine your dry ingredients. In another bowl, combine your wet ingredients except egg whites. Mix everything together in one bowl. Beat your egg whites until soft peaks form. Fold your fully whites into the mixture then equally distribute it into the 6 molds. You may have to smooth out the tops with your fingers. Bake for 12-15 minutes then allow the donuts to cool while preparing your glaze. Simply heat the coconut oil and chocolate in the microwave or over the stove. Don't let it bubble! This shouldn't take too long. You just want the ingredients to melt together. With a spoon, drizzle the glaze over your cooled donuts & sprinkle with coconut flakes & chia seeds. Serve with a side of fresh fruit and enjoy!
