Cinnamon Date Breakfast Granola

Skip store-bought and make your own granola for breakfast! I promise this version tastes way better and will leave you a lot more satisfied than a bowl of Special K.

Cashews and dates offer the perfect balance of sweet & salty and a dose of energy that lasts well into the afternoon. My recipe is an adaptation of these Coconut Cashew Bars. I just had the idea to add a few more things and enjoy it with almond milk and fresh berries as cereal versus a snack. Hope you enjoy it too! 

It's super simple to whip up a batch at home that will last you up to two weeks.

This recipe makes 10 servings. 

Here's what you need:

  • 2.5 C raw cashews
  • 1 box pitted dated (about 12 of them)
  • 1/3 C coconut flakes, unsweetened
  • 2 heading tablespoons almond butter
  • Dash of cinnamon

Directions:

In a Vitamix or food processor, pulse the cashews until they break down into tiny pieces. Add in the dates and pulse them until a doughy consistency forms, like a Lara bar. Transfer the mixture to a bowl and stir in the almond butter, coconut and cinnamon.

Transfer the mixture into a sqaure dish and smooth the top with a spatula. 

Seal and store in the fridge for up to two weeks. You can keep them in the freezer too and take one out 20-30 minutes before you want to enjoy with some milk and fresh berries. I like sliced strawberries best.
