Raw Date & Coconut Truffles

Sweet and simple. These raw date truffles make the perfect Sunday night treat and great on-the-go snacks for the week ahead. They are a great substitute for store-bought treats because they are filled with whole, nutrient dense ingredients like dates and coconut that won't spike your blood sugar levels. Plus, dates are packed with potassium and magnesium and they're rich in fiber to keep you feeling full longer. And the cacao powder offers a healthy dose of antioxidants! 

Here's what you'll need:

  • 7 dates
  • 1 T coconut oil
  • 1/3 C cacao powder (I like Navitas Naturals)  Cacao can be intense for some people so you can scale back on it and substitute some nut butter instead 
  • 1 t coconut nectar or brown rice syrup
  • 1 t almond extract
  • Pinch of salt
  • Dash of cinnamon
  • Dash of cayenne (optional, but adds a nice, subtle kick)
  • unsweetened coconut flakes (for rolling truffles in)

Directions

In a food processor, blend all ingredients together except coconut flakes. Once a nice paste forms, remove the mixture and form into 12 small balls. Roll each of them in unsweetened coconut flakes. Store in fridge for up to 1 week.
