The Best Healthy Chocolate Chip Cookies
Trader Joe's—home for "surprise and delight" for taste buds. Today's find—a dark chocolate bar with raisins and pecans. Yes, please! To make the most of this sweet treat, I decided to use it in the cookie recipe below, which is gluten-free and free of refined sugars (except this little bar;-). You could totally sub in a pure high-cocoa content dark chocolate bar if you want to make it totally refined sugar-free. These cookies are the perfect treat when you have a sweet tooth or right after a workout! And they are totally guilt free at only 190 calories each.
Makes about 10 large cookies
- 1 1/2 cups gluten-free flour
- 1t cinnamon
- 1/2t salt
- 1 egg
- 1T brown rice syrup (or you could use maple syrup, agave nectar, raw honey)
- 2T coconut oil, melted
- 1T almond butter (peanut butter would be delicious too)
- 1 small ripe banana
- 1 bar dark chocolate, chopped roughly
Preheat your oven to 350.
In a medium bowl, mix the flour, salt and cinnamon together. In a separate bowl, mix together the coconut oil, almond butter and vanilla extract. Whisk in the egg. Fold the dry ingredients into the wet mixture. It will be sticky so have some extra flour on hand! Fold in the chopped chocolate.
With your hands, make 10 balls and flatten them a bit into a cookie shape on your prepared baking sheet.
Bake at 350 for about 10-12 minutes depending on your oven. Serve warm or store in the fridge for a few days.
