Super Simple Granola Recipe (Sugar Free)
This is the best granola I've ever made—so tasty and super simple to whip up one Sunday night so you can enjoy all week long! I love eating mine with a splash of almond milk and fresh fruit like mangoes or blueberries. You could also use this granola on top of greek yogurt with fresh fruit for a quick & easy parfait. It would also be a tasty ice cream topping!

What you need:
1 C oats
3-4T almond butter (I used the raw, unsalted kind from Trader Joe's)
2T coconut oil
1T chia seeds (I use a product that blends chia, flax and hemp seeds together) so I sprinkled some of that in but you could use just chia seeds too
1/3C coconut flakes (unsweetened)
Preheat your oven to 375.
In a large bowl, mix together your oatmeal, seeds and cinnamon. Set aside. In a small bowl, melt the almond butter and coconut oil together for 15-20 seconds. Add the vanilla and mix it all together. Pour warm mixture into oat mixture and stir everything together. Finish by stirring in your coconut flakes.
Spread the mixture on aluminum foil on a baking sheet (with spray) and bake for 20-25 minutes until golden brown.
